Butter Baked Goodness!

We are going to be hit with a cold front the weather man tells us, this coming week. It’s hard to believe as I look outside, it’s clear and autumn looking. I guess it is December 28th, it is winter!

When I hear cold weather is coming, my insides are excited, this means wearing cozy slippers, blankets wrapped around me and reading a  good book (preferably a cook book) and making soup! I have this love of making homemade soup. Like I mentioned, it’s December 28th, so with the leftover hambone from Christmas, I made my first ever pea soup. Pea soup has always kind of scared me, it is green, thick and has PEAS!!! I have always told myself that I do not like peas, really, I have not given them a fair shake. Also with the turkey carcass, on the stove top right now is a turkey noodle soup.

Well we can’t have a soup without a scone or a biscuit, so immediately I went to my Butter Baked Cookbook, that I am absolutely in love with. I wish I could give it to everyone as a gift, but the banker tells me I can’t! Instead I will share the link with you, and tell you that this book is AMAZINGSAUCE!!!

The fragrant smell of my soup is accompanied with the wonderful smell of the Apple Bacon Cheddar Scones today.  This recipe must be tried by all of you!

scone1 scone2I just love using my Kitchen Aid mixer, this lil girl is just so handy, I can’t imagine my life without her!

The bacon used today was scrumptious, who doesn’t enjoy bacon!

Margarine is something you will NOT find in my kitchen. I decided about 5 years ago that this was something that does not belong in my fridge. Growing up my mother was not much of a baker, and I never recall seeing actual butter in our house. I remember that there was always a tub of Country Crock, which I think is a cheap version of margarine.

Once your dough is mixed, it will feel a little wet and sticky, but that is the way it should feel. Transfer to a flour surface and roll out. It really is a beautiful sight!

Once the egg wash and cheese have been put on the cut pieces, in to the oven it goes.
